1/8 BEEF = approx 30 lb. = $218 +/-
1/4 BEEF = approx 60 lb. = $436 +/-
1/2 BEEF = approx 120 lb. = $872 +/-
Due to the individual nature of each beef, the butcher determines the suitability for individual cuts and therefore quantity and weight of each cut will vary. However, you can expect to receive approximately:
20% STEAK VARIETY (filet, ribeye, NY strip, sirloin, flank/skirt)
20% ROASTS + STEW PIECES (chuck, rump/shoulder, round)
60% GROUND BEEF (1-lb packages, approximately 85-90% lean.)
PICKUP LOCATION WILL BE IN COLUMBIA, KENTUCKY.
BEEF PROCESSED UNDER USDA INSPECTION IN LIBERTY, KENTUCKY.
